Super easy to make and I try to always have some in the freezer as they thaw relatively quickly.  Just plain, we tear them and use as a scoop instead of bread for Baba Ganoush or Tzatziki and as breakfast pancakes once in a while but one of my favorite ways to use zerocarb flaxseed meal crepes is filled with cream cheese sweetened with liquid sucralose and pureed strawberries or raspberries. They make an elegant low carb dessert for dinner guests. Raspberry Almond Crêpes

Depending on what you intend to do with these versatile little puppies you can add flavoring extracts to the mix. Examples: 1 t orange extract if making strawberry crepes, or 1 t almond extract if making raspberry crepes. Flaxseed Meal Crêpes

Ingredients
  1. 4 Eggs
  2. 1½ C Warm Water (Only More To Thin If Necessary)
  3. ¾ C Golden Flaxseed Meal
  4. ⅓ C Melted Coconut Oil
Instructions
  1. Beat all ingredients together. Batter should be very thin. (I use my stick blender)
  2. Let batter rest at least 10 minutes (it will thicken slightly) and then add more water if necessary and if you are unable to "swirl" the batter.
  3. Make sure you keep your mixture stirred as you make each crêpe and you may (or may not) need to add a bit of water.
  4. Put an 8" non-stick pan on medium low-medium heat. Put a scant ¼ cup in center of pan and swirl to make a “crêpe”. COVER PAN UNTIL TOP OF CREPE IS DRY and they may puff a bit because of the egg. I let mine get a little darker brown and curled on the edges. DO NOT TRY TO TURN OR FLIP THEM. When dry on the top, GENTLY SLIDE OUT OF THE PAN ONTO COUNTER to cool. If they fold a little don't touch them until they are cool-they will unfold. If you have a crêpe pan all the better (I guess) and I do not, but you do need a good non-stick pan. You will know when they are finished as they will loosen and slide out onto your counter. I slide mine out onto a wooden cutting board because they do have coconut oil in them which will get on the counter and will need to be wiped when you are finished with them all.

  1. You may get more or less crêpes per recipe depending on the size of the flat part of the interior. The 8" pan I use has a pretty large flat bottom and that is how I calculated the number of crêpes per recipe. If your pan is smaller you will get more crêpes and if they don't seem large enough then use a 10" pan.
  2. As you are making your crêpes the batter will begin to get thicker so add a bit more water so you can continue to swirl it.
  3. Crêpes are very "tender" when hot so treat them gingerly. Once cooled they are easy to work with.
  4. As you can see these have nearly 0g carbs and are healthy, healthy, healthy as compared to any regular crêpe at 10.8g carbs. I mean seriously-WOW.
  5. If all you have is the darker flaxseed meal not to worry they will be just as good and just as healthy but they will not "look" quite like a crêpe.
  6. For my dinky family I put these 4 at a time in food wrap.
  7. They may look uncooked on the top but you will be filling that anyway and after rolling they look like any other crepe.
  8. Secret: Even with a good pan this is what I do. With the barest amount of coconut oil, I put in on the tip of my index finger and smear it over the bottom and up the sides about ¼". This way you will not lose the first crepe. Each crepe after that is clear sailing and will slide out very easily.

When I was a little girl growing up in Ohio, and maybe 7 or 8 years old, I was out playing in the yard and literally, over night, there were about 8 or 9 puffballs all within close proximity of each other.  I ran in the house and got my mom to show them to her. Well, she picked one with a diameter of about 6 inches, took it into the kitchen, sliced it in ½” pieces and fried it in butter. OMG it was delicious.  I had two younger brothers and when they found the puffballs they kicked them to smithereens like all goofy little boys would do (Think footballs). My mom was angry and really what could she do? It was the first and only time they ever came up and I feel lucky that at least once, I got to eat a puffball.  Besides their general appearance, they are called puffballs because of the clouds of spores that “puff” out when they burst open or when ready, are hit with the impact of falling rain.

Alas, there are no puffballs in this keto mushroom ragout; I just thought you might be interested in the story. However, if you are ever lucky enough to find a puff ball, as Andrew Zimmern would say…eat it.

Mushroom Ragout Over Mashed Cauliflower

  1. 3 T Olive Oil
  2. 3 T Butter
  3. 2 Lb Sliced Mixed Mushrooms (Portobello, Cremini, Shiitake, Button)
  4. ¾ C Small Dice Onions
  5. 1 T Butter
  6. 1 T Crushed Garlic
  7. 1 t Dried Thyme
  8. 1 t Dried Oregano
  9. 1 Can Petite Diced Tomatoes (Otherwise Regular Diced Tomatoes)
  10. 2 T Tomato Paste
  11. 2 C Chicken Stock (Make Your Own & Skip The Salt)
  12. 1½ t Porcini Dust
  13. 1½ t Salt
  14. ½ t Pepper
  15. ½ C Parmesan Cheese
  16. 6 T Thinly Sliced Green Onion Tops (Dried Chives Also Work Well)
Instructions
  1. Place a large skillet over medium heat with 1 T butter and sauté onions until translucent, 3-4 minutes.
  2. Add garlic & cook an additional minute. Set aside in large mixing bowl.
  3. If using portobellos, scoop out the black gills.
  4. Turn up heat to at least medium high, add ½ the olive oil & butter to pan and when the butter is brown, add ½ the mushrooms & sauté. Add to mixing bowl and repeat.
  5. Now to your empty pan add the thyme, oregano, diced tomatoes, tomato paste, and stock.
  6. Add back the mushrooms & onions, bring to a simmer, stirring occasionally, until the liquid has reduced and thickened just a bit, about 10-15 minutes.
  7. Add more stock as/if needed/wanted. Correct any seasoning.
  8. Plate cauliflower( if using) and top with the ragout. Garnish with the Parmesan and green onions, and…chow down.

If you serve it to anyone under the age of 40 they may never have heard of fondue let alone eaten it, so you can dazzle them and personally I can make this a complete meal with sausage & vegetables or…it makes a fabulous sauce over broccoli.  This low carb cheese fondue is the recipe from the Rheinlander German restaurant here in Portland in my neighborhood and it is always what I order when I go there. Sadly, this restaurant is now closed so…I need to make my own low carb cheese fondue.

Cheese Fondue

Ingredients
  1. 1 Lb Gruyere Cheese (Or Better Yet Raclette)
  2. 1 C Dry White Wine
  3. 1 T Corn Starch
  4. ½ t Crushed Garlic
  5. ¼ t White Pepper
  6. ¼ t Cayenne Pepper
  7. Pinch Nutmeg
Instructions
  1. Cut off any rind as it will not melt and then grate cheese.
  2. In a stainless steel saucepan, very slowly simmer white wine, garlic, nutmeg, white pepper and cayenne pepper for approximately 1-2 minutes to reduce wine and let a little alcohol cook out.
  3. Thoroughly toss corn starch into grated cheese.
  4. Take wine off heat, add ⅓ cheese, and mix until melted. Put back on heat and repeat and repeat one more time. If not completely melted alternately put on and take off heat until it does.
  5. If too thick, add more wine. If too thin, add more cheese. The consistency of the fondue should coat sausage or vegetables evenly when dipped into mixture.
  6. If you have a fondue pot all the better (and I do not) otherwise serve immediately in individual ramekins.
  7. Serve with any good sausage or vegetables.

Sausage Spinach Stuffed Portobello Shrooms

  1. 4 Portobello Mushrooms
  2. ¼ Lb Ground Sausage
  3. ¼ C Minced Onions
  4. ½ C Chopped Spinach
  5. 4 Oz Sautéed & Chopped Mushrooms
  6. 4 Oz Grated Gruyere Cheese
  7. 1 T Butter
  8. ½ t Porcini Dust***
  9. ½ t Salt
  10. ¼ t Pepper
Instructions
  1. Preheat oven to 350°
  2. With a small spoon carefully scoop out black gills and if you can, buy mushrooms that are still curled on the edges as these are the most fresh.
  3. Twist out stems, chop finely, add to other chopped mushrooms & sauté in butter.
  4. Cook sausage, retain fat, and sauté onions.
  5. Put sautéed veggies in bowl with rest of ingredients and mix well.
  6. Mound ¼ mixture into each portobello cap and bake until caps are just tender-about 25-30 minutes.
  7. 4 Servings

Warm Green Beans/Blue Cheese

  1. 1 Lb Green Beans
  2. ⅓ C Toasted Sliced Almonds
  3. 4 Pieces Bacon
  4. 2 Oz Good Quality Meltable Blue Cheese
  5. ½ C Slivered Shallots (Or Onions Work As Well)
  6. 3 T Olive Oil
  7. 2 T Red Wine Vinegar
  8. ½ T Dijon Mustard
  9. ½ t Salt
  10. ¼ t Crushed Garlic
  11. Fresh Cracked Pepper
Instructions
  1. Cook bean in boiling water until barely tender-about 5-6 minutes, drain, put in large bowl.
  2. Cut and cook bacon until crispy, add to beans, reserving the fat.
  3. Sauté shallots in bacon fat, add to beans.
  4. Toast almonds. I do mine in the same sauté pan on the stove-top with a small amount of bacon grease. Add almonds to beans reserving 1 T to garnish on top.
  5. Whisk mustard, garlic, salt, & vinegar, whisk in olive oil, add blue cheese, add to any remaining bacon fat, and heat slowly just until cheese begins to melt.
  6. Dress the beans.
  7. Serve with lots of cracked pepper.

This is a no messin around real deal lowcarb Macaroni and Cheese with real low carb pasta.  You will need a recipe of low carb Spaetzle  as your pasta and this should yield about 3 cups.  This is a super easy recipe to make including the Spaetzle.  If you want to gild your lily put a recipe of Au Gratin Casserole Topping on top.  This will add 1.5g net carbs per serving.

I use Gruyere cheese in mine but of course any good cheddar, Swiss or combination of cheeses will work.  If you can’t tell from some of my other recipes; Gruyere is definitely my cheese of choice.  My husband says I use too much of it (and yes, it is expensive) and I have to keep telling him to get over it.  I also happen to like a really creamy mac & cheese and if you don’t then use ½ C less cream.  Sprinkle some crumbled bacon on and Ooh La La.  This is extremely filling due to its high fat content.

Macaroni & Cheese

  1. 1 Recipe Spaetzle
  2. 2 T Butter
  3. 1⅔ C Heavy Cream
  4. 2 t Mustard Powder
  5. 2 t Chicken Base
  6. ½ t Pepper
  7. ½ t Paprika
  8. 1 C Grated Cheese (About 3 oz)
  9. 2 T Parmesan Cheese
Instructions
  1. Sauté spaetzle in butter until golden brown spots begin to appear. Take out of skillet, put in 6"x6" casserole dish, and sprinkle with cheese.
  2. On medium, begin heating heavy cream, add mustard, chicken base, pepper, & paprika and thicken slightly.
  3. Pour over pasta, top with Parmesan and bake in 350 degree oven for about 15-20 minutes.
  4. If you opt to top with bread crumbs put them on before baking and omit the Parmesan.
  5. 6 Servings

  1. This is how I do it if I'm heating it later. I microwave everything on low until just warm. This way the cheese does not curdle and it takes far less time to cook overall.
  2. OK, now you can mess around a bit. You can add tuna or anything you want before you begin heating this dish and it will probably take an extra ¼ C of cream.
  3. If you like a crustier mac & cheese save some cheese for topping.
  4. Recipe easily doubles or triples.

Low Carb Spaetzle Pasta/Noodles

Oh good grief-this is the first pasta/noodles recipe I have tried to make with Cabalose Flour and it is fantastic.  If you have never had spaetzle you are in for a treat.  Please pardon my description but they look kinda like little white rabbit turds gone wrong.  I know, I know, sorry but the taste will more than off-set the description.  It seems just about every country in the world has its own way of making pasta and this is the way the Germans make theirs.  DO NOT USE CARBQUIK-IT WILL NOT WORK.

After you have made these once or twice your mind will go nuts with the things you can put/do with them.  Fried in butter with poppy seeds, with chives, with mushrooms, Parmesan cheese, your favorite sausage, under a light marinara sauce or a robust Puttanesca Sauce, Tomato Sauce loaded with full fat mozzarella, Tomato Basil Cream, heavy cream & Pistol River Porcini Dust, mixed with spinach & gruyere, a few carmelized onions, any cold pasta salad, and gads, these are just a few quick things I can think of.  Here is the recipe for Macaroni & Cheese  Anything you can do with pasta you can do with this recipe so if you like spaetzle the this low carb spaetzle is for you.

Spaetzle1You will need an old fashioned large holed cheese grater or if you actually have a spaetzle grater all the better (I do not).  I am of the Alton Brown school of though regarding kitchen tools.  If it only does one job I don’t need it.  Two is iffy but three or more…sign me up.  If you have a potato ricer (again I do not) this will give you a longer skinnier low carb spaetzle which is good for soups like the pic to the right.

  1. 1 C Carbalose Flour***
  2. 2 Eggs
  3. 6 T Heavy Cream
  4. 6 T Water
  5. ½ t Salt
  6. ¼ t Pepper
  7. ⅛ t Guar Gum
  8. ⅛ t Grated Nutmeg
  9. 2 Drops Liquid Sucralose***
Instructions
  1. Bring a pot of water to simmer.
  2. Put flour & spices together and stir.
  3. Beat eggs then add water, heavy cream, & Sucralose and add to flour.
  4. Batter should be of a medium thick consistency.
  5. Using an old fashioned large holed grater, put about ½ C batter on top, and with grater over the water, run your index finger gently over the dough and let it drop into the water. It will sink and almost immediately float. Cook about 2 minutes.
  6. Remove with a small strainer or spider.
  7. Repeat until finished.
  8. 6 Servings

Low Carb Mashed Cauliflower

Low Carb Mashed CauliflowerLow Carb Mashed Cauliflower. There is no recipe card here, just instructions for non-watery mashed cauliflower.

Trim off leaves and very end of stems of 3 heads cauliflower. All the rest is usable. Cut cauliflower into manageable chunks, put in a large stock pot, cover with water and boil the hell out it.  Dump it into the sink, drain and let cool. If the heads are large it may take two boilings.

Take a handful and squeeze out all the water you can. Repeat until finished.

Put squished cauliflower in appropriate size mixing bowl and mash the hell out of it or/and the easy way is to use an emersion blender. This will make the cauliflower truly potato-like with a lot less clean up than using a food processor.

And then there is the steamed version and I am not opposed to it-I just do it as above. Please, use the cauliflower cores.  They mash just like the florets and if you are throwing them away…

What else I do:

Since there are two of us I freeze 1½-2 cups in individual containers and pull out of freezer as needed and here is what happens: Even more water comes out…and I mean lots more. I drain off the liquid and heat it very slowly which pretty much gets rid of the last of its water and best thing?…no more watery mashed cauliflower!

With this recipe it’s Katy bar the door and the possibilities are nearly endless. Top it like you would a loaded baked potato, put garlic in it, put in under things-Oh good grief I can think of more things than I can write down and anyway you get the idea and I use it with quite a few of the entrée and soup recipes on the site.

Don’t be intimidated by the looks of this recipe.  It’s not nearly as complicated as it appears and once you’ve made it you will see what I’m saying. This is quite lovely and certainly stunning enough to serve guests. And tasty?…yea, it’s way that too. As mélange translates to “mixture” you may of course put any vegetables that suit your fancy or… happen to have on hand at the time.  This happens to be my favorite.

Instructions
  1. FILLING
  2. Heat oil to medium high to sauté zucchini and transfer to bowl.
  3. In leftover oil, sauté mushrooms then sauté onions and add garlic.
  4. Mix all sautéed vegetables with rest of filling ingredients.
  5. DOUGH
  6. Put first 8 ingredients in processor.
  7. Bloom yeast with sugar in warm water for 10 minutes.
  8. Add Sucralose to top of bloomed yeast.
  9. With processor running add beaten egg (don’t forget to reserve 2 T), add bloomed yeast & cream and process for at least one minute.
  10. Carbalose flour is not sticky but eggs are so this time your dough might be a little sticky and as you are forming the loaf to put into your pan it will then end up pretty much non-sticky.
  11. Since you will be rolling this into a rectangle, place dough in your small bread pan, cover with film, and let rise about 30 minutes.
  12. Invert dough onto Silpat or bench floured countertop and roll out rectangle to about 11½”x16½” or to completely cover Silpat.
  13. Spread center 4” with filling and top with Gruyere cheese.
  14. Brush about 2” of the dough with your reserved beaten egg.
  15. Cross one side over veggies and pushing down gently cross second side over first by about 2" making sure to seal the top well. The egg is your glue.
  16. OK, here comes the tricky part. If you have help great and most of the time we don’t so…you have to kind of scrunch it up and quickly transfer to parchment lined sheet pan. Or better yet, if you used your Silpat just lift that into the pan. Once you have made the transfer you can re-position and stretch it.
  17. Brush the entire pastry with egg, cover with film and let rise 10-15 minutes. It may not rise much and it will in the oven.
  18. Put in 340 degree preheated oven for 25-30 minutes or until golden brown.
  19. Cut into 2” pieces
  20. 8 Servings

Low Carb Au Gratin Casserole ToppingThis Low Carb Au Gratin Casserole Topping is a great alternative to fried onions on a green bean casserole or just about any other casserole or vegetable dish.

You will need Carbalose Flour Bread to make the crumbs and the uses are nearly infinite. You will find this in several recipes on the site.

What I do is make a recipe of the bread, grind the whole loaf, keep it frozen for use later and then every time I cut ends off a loaf, I throw them in with the crumbs and when I have enough I grind them into crumbs so…I always have them on hand. Your first loaf of bread will yield about 8 cups of crumbs.

What to say.  This Carbalose Bread Stuffing is another way I use Carbalose Flour.  Not all that often, but the problem is that I know way too many recipes and it takes me a while to cycle through a lot of them, and I have to say, I should make it more often because it is so good and a great accompaniment to many meals. I don’t have a clue where any of you live but…if…you live either in the Pacific Northwest or British Columbia, Canada RossDown Chicken is hands down the best chicken I have eaten since I was a kid.  I have tried about every chicken product there is and this IS the best-ever. Carbalose Bread Stuffing

Ingredients
  1. 8 oz. Dried Carbalose Bread Cubes (5½ -6 Cups)
  2. ¾ C Small Diced Celery
  3. ¾ C Small Diced Onion
  4. 1 C Water
  5. ½ C Butter
  6. 1 T Chicken Base***
  7. 2 Beaten Eggs
  8. 1 t Dried Sage
  9. 1 t Poultry Seasoning
  10. ¼ t Pepper
  11. More Water To Moisten
Instructions
  1. Put cup water, butter, and chicken base in skillet, heat, and add celery & onions. Cook on low until very soft then add seasonings.
  2. Cool slightly and add beaten eggs.
  3. Add additional 1 C warm water to celery onion mixture and pour all into dried bread cubes. Mix, let sit, and add water as/if needed until stuffing is moist.
  4. Butter glass baking pan and bake at 350 degrees until beginning to brown on top.
  5. 8 Servings
  6. 190 Calories, 6.5g Protein, 14.4g Fat, 8.3g Carbs, 4.4g Fiber, 3.9g Net Carbs

  1. Low Carb Additions: sautéed mushrooms, oysters, spinach, sausage, pine nuts, almonds, sugar-free cranberries, and small diced Granny Smith apples.
  2. How we eat this: I cut out the backbone of a chicken, butterfly (spatchcock) it, butter a piece of foil, put the stuffing roughly in the shape of a heart, put the chicken on top of the stuffing, and bake it at 375 degrees for about 1¼-1½ hours and wahoo it’s so good. As the chicken cooks the juices and fat go into the stuffing.
  3. Needless to say this goes well under/with Cornish game hen.

Low Carb Ratatouille

Low Carb RatatouilleLow Carb RatatouilleLow Carb RatatouilleLow Carb Ratatouille SoupLow Carb Ratatouille. All I can say is leave it to the French-even their “peasants” know the fine art of cooking.  This is so good, makes a lot, and best of all it is easy to prepare.
Serve under/over eggs for breakfast, lunch or dinner, and yes, make a fabulous soup with the addition of more water and heavy cream. The best news is that the soup can be served cold, warm or hot.

Beware, if making jut soup best to make ½ a recipe or make it with left-over low carb ratatouille because it will make a LOT of soup. Probably 6 large bowls and 8-10 smaller cups.

  1. 1 Medium Eggplant Peeled & Cubed (4 Cups)
  2. 2 Large Zucchini Cubed (4 Cups)
  3. 1 C Large Diced Onion
  4. ½ C Olive Oil
  5. 1 Can Diced Tomatoes
  6. 1 C Water
  7. 1 T Crushed Garlic
  8. 2 t Dried Basil
  9. ½ t Dried Oregano
  10. ¼ t Dried Thyme
  11. Salt & Pepper To Taste
  12. Parmesan Cheese
Instructions
  1. Peel and cube large eggplant.
  2. Cut Zucchini in half lengthwise and then each half into thirds and make large cubes.
  3. Heat olive oil to very hot and brown eggplant.
  4. Turn heat to low, add rest of ingredients, stir, cover, and cook for 1-1½ hours, stirring occasionally. If additional water is needed-add it. Add salt and pepper to taste.
  5. 10-½ C Servings
  6. 131 Calories, 1.2g Protein, 6.4g Carbs, 2.2g Fiber 4.2g Net Carbs
  7. 8 Servings
  8. 165 Calories, 1.5g Protein, 11.2g Fat, 8g Carbs, 2.8g Fiber, 5.2g Net Carbs
