Keto Lemon Garlic AioliKeto Lemon Garlic Aioli as shown with padron peppers. An aioli, as I know it, pretty much always has garlic in it and by garlic I mean GARLIC and served as an appetizer with padron peppers? Yikes, so good. Not too long ago chef Taffiny Elrod from NY, a twitter friend, became a real-life friend when she came to visit Portland for a food conference.

We ate at the spectacular restaurant OX and one of the appetizers we had was padron peppers in some to-die-for sauce.  I have always loved padrons just blistered and drenched in olive oil and lots of salt but as you can see and may find out that the addition of the keto lemon garlic aioli with the padrons are simply to die for.  Blistered padron peppers have what I consider a very mild heat but…every once in a while you might get a zinger.

Lemon Garlic Aioli

  1. ½ C Mayonnaise
  2. 2 T Crushed Garlic***
  3. Juice 1 Lemon
  4. ¼ t Paprika
  5. ¼ t Chipotle Powder
Instructions
  1. Mix all ingredients and refrigerate for several hours.
  2. 6 Servings~93% Fat

  1. All ingredients can be adjusted to your own likes and tastes-this is just the way I like it.
  2. Now here is where you can get creative. Sub lime juice for lemon, sub chipotle powder with chili powder and you can dunk nearly any lowcarb vegetable into it you may like. Like red peppers, jicama sticks, cucumbers, celery, and the list could go on.

Keto Orange Sauce

Yes, here it is, and if you weren’t told, you’d never know.  It is orangeyness at its best…with NO ORANGE JUICE. I do use a good quality extract diluted with alcohol and not a seed oil. The alcohol will gas off and the seed oil?-You will end up eating it as it will not.

There are so many ways to use this keto orange sauce. With Crepes Suzette, on Pulled Pork, chicken, scallops, most any fish, and my personal favorite, duck breast, which I have shown above. I happen to have access to a farm that raises and sells their ducks to a market in the area where I live so I am lucky in that respect, but you can always find whole duck in any Asian market, spatchcock it and use this keto orange sauce with it. Peking Duck has always been a special meal for me and with the advent of my Low Carb Hoisin Sauce I can pretty much have it any time I want to-and I do.

I don’t-but if you eat ice cream, this would probably make a pretty tasty topping and since it has butter in it, I think it would crackle before you got it served? I know the last pic looks a little like ice cream but…it’s grated daikon radish and the pic to the left is with blistered shishito peppers. On raspberries? Don’t even ask. Keto orange sauce is probably pretty tasty on a brick.

Orange Sauce

  1. 1½ T Orange Extract
  2. ¼ C Water
  3. ¼ C White Wine
  4. 2 T Brandy
  5. 2 T Grand Marnier
  6. 2 T Orange Zest (About 1 Medium Orange)
  7. 1 T Apple Cider Vinegar
  8. 8 Drops Liquid Sucralose***
  9. 4 T Butter
  10. Smidgeon Xanthan Gum
Instructions
  1. Mix first 8 ingredients in a small sauce pan and bring to simmer. Turn off heat, beat in xanthan gum, and add butter 1 T at a time until smooth and creamy.
  2. It’s that easy and ready to serve.
  3. 8 Servings

Notes
  1. No problem with refrigeration, as it really will not get hard and will last more than a week or two but who are we kidding. It simply won’t last as you will want to have it again and…again…and…again.
  2. If you do get it into a refrigerator, just let in sit on the counter for an hour or two and stir to get that beautiful sauce ready to use again. Any butter bits will melt immediately upon hitting any warm food.

Be careful with this stuff as it is blow-your-brains-out spicy and then again, I’m guessing that’s why you are here.  If you are tired of the crap you get with Chinese takeout (if you even eat Chinese take out) then this super easy recipe is for you. If you are so inclined to sweeten it (no don’t) you can sweeten to taste. I would suggest the recipe for Chinese BBQ Pork be served with this but it is also good with sliced pork on a good Lowcarb Bread or even on pulled pork mixed with the juices.

  3. 2 t Sugar Free Rice Wine Vinegar
  4. 2 t Dijon Mustard
  5. 2 t Water+Additional To Dilute If Wanted After It Rests
Instructions
  1. Mix all ingredients and let sit at least 10-15 minutes. Add more water as needed.
  2. 4 Servings
  3. No Nutritionals-It's zero everything.

  1. Be careful, as this is serious sinus-burning stuff so start out timidly and go to more when you think you can.

Keto Blue Cheese Garlic Butter

Keto Blue Cheese Garlic ButterKeto Blue Cheese Garlic ButterKeto Blue Cheese Garlic Butter.  You know, we may never have realized it but if you have ever ordered steak in a restaurant chances are you have been served a compound butter a time or two.  Often enough it may arrive as a little puddle of something on top of your steak but boy oh boy, it sure was good. Compound butters are small but powerfully flavored allies in the meat world. Can you use a keto blue cheese garlic butter with vegetables?  Yes, of course you can but it just isn’t done that often because as garlic cooks it also mellows to milder, you probably would not want blue cheese in it and as a compounded butter you get the bite and flavor of GARLIC which, with a steak or meat of some kind is sometimes just what you want.  Coupled with an off the outside grilled steak?  Ooh La La La La La La.

One of the really nice things about a compounded butter is how wonderfully they freeze for use at another time and when you don’t have the time to throw a sauce together.  Just take your log out of the freezer, let it sit for 15 minutes, slice what you need and pop it back into the freezer for next time.

Compound Garlic Butter

Ingredients
  1. 8 T Butter (1 Stick)
  2. ¼ C Finely Chopped Green Onion Tops
  3. 2 Oz Good Meltable Blue Cheese
  4. 2 T Garlic Paste***
  5. ¾ t Salt
  6. ½ t Pepper
Instructions
  1. Bring butter to room temperature.
  2. Mince green onion, and by the time you are finished it will probably be about 1 T.
  3. Add garlic paste, onions, salt & pepper to butter and mix thoroughly.
  4. Lay down a piece of film and put a log shaped blob of butter a bit longer than your original stick of butter.
  5. Now gently roll the log as tightly as possible and when finished twist the ends which should give you some semblance of a “log”. Roll again gently to make it round.
  6. Put onto flat surface and refrigerate until hard.
  7. Slice off about 1 teaspoon rounds and serve 2-3 rounds per steak.
  8. 12 Servings

Keto Ranch Dressing

I distinctly remember where I was and what restaurant we were in, the very first time I ever tasted buttermilk ranch dressing. It was probably in about 1978-79 in a kind of upscale steakhouse joint just to the right off I-25 headed north in the Denver Tech Center.  You know the routine; waitress lists off the salad dressings and then tell us about this new dressing called buttermilk ranch.  I bit, ordered, and oh Lordy, It. Was. So. Good.  Of course I had never had anything even close and was obsessed to figure out how to make it. I never did need to learn to make it on my own because the next thing you know it was being shown at all the restaurant shows and it was suddenly available everywhere.  Now, it had actually been invented by a dude ranch owner in the 1950’s but as I used to eat in a lot of different restaurants, I had never come across it until this time. One of the first things you see in the ingredients list on a ranch dressing dried powder packet is sugar in the form of maltodextrin and though mine tastes like the original ranch I had had, it does not have any added sugar.

The reason I finally made my own keto ranch dressing from scratch all these years later is that I wanted to do a recipe for Chicken Milanese and I wanted it sugar-free.  I also eat Buffalo Wings from time to time and now…I have my very own keto ranch dressing so I made wings the  next night.  I would like to give a huge shout-out to Chef Taffiny Elrod from NY who became a real life friend from Twitter when she came to Portland to attend a conference a couple of weeks ago. Met and had a fabulous dinner at Ox restaurant after. Ran into Nora Gedgaudas  that night, we spoke briefly, and you know if Nora eats at Ox it’s a gonna be good.  Taffiny and Nicole gave me my own swag bag with a couple of cheeses and some of it is in the upper left picture.

Ranch Dressing

  1. 2 T Heavy Cream
  2. 2 T Water
  3. 1 T Buttermilk Powder
  4. ½ C Mayonnaise
  5. ¼ C Full Fat Sour Cream
  6. 1½ T Dried Parsley Flakes
  7. ½ T Lemon Juice
  8. 1 t Maggi Seasoning (More To Taste Later If Needed/Wanted)
  9. 1 t Nutritional (Torula) Yeast (This Is The Secret Ingredient)
  10. ¼ t Garlic Powder
  11. ¼ t Onion Powder
  12. ¼ t Fresh Ground Pepper
Instructions
  1. Mix first three ingredient.
  2. Add rest of ingredients, mix well, refrigerate for at least 4 hours and overnight is best.
  3. 8 Servings 2 T
  4. 119 Calories, 0.5 Protein, 13.3g Fat 0.8g Carbs, 0.1g Fiber, 0.7 Net Carbs

  1. Torula yeast is umami on steroids and can be found in most grocery stores that sell bulk foods because...it is a secret ingredient in most vegan food.
  2. This will make 1 C dressing which is about the amount you get in a bottle of store-bought stuff. If you decide you love this dressing it is probably a good idea to double the recipe because 1 C is not enough. Besides being better than Ranch Dressing making your own is a lot cheaper.
  3. Do use freshly ground pepper~it makes a big difference.
  4. To use as a dip instead of a dressing just omit 1 T Water. It should be plenty thick enough.

Keto Zaatar Yogurt Dip

I eat this certainly more than from time to time and it is a knockout for breakfast, so sorry, I have never put it up as a recipe.  I will use any excuse to use za’atar and this simple Keto Zaatar Yogurt Dip is one of mine (excuses).  I call this a yogurt dip but you will seriously either need to get a very thick yogurt or simple make your own.

I do not advocate any of the commercial yogurts because they have thickeners and stabilizers in them.  I do make my own Strained Keto Yogurt but as I have gotten older I have begun mostly using Karoun Kefir Cheese Labne.  I can only tell you how fabulous it is …you will actually need to buy it to try it.  I guarantee you will never go back no matter how you eat yogurt.  Does it have things in it that my yogurt doesn’t have?  Yes, maybe one or two, but the bottom line is that it has a very high fat content with a much lower carb count.  The Aleppo pepper in the ingredients list is something I use a lot and is not listed in the recipe card. If you have it, please use it. The picture of the White Mountain Bulgarian Yogurt is an exception and if you want the absolute best yogurt you have ever tasted this is it.  Comes in a glass jar, is made with whole milk, with no fillers or thickeners of any kind and the only other ingredients are (4) four live cultures.  I don’t think it is suitable for this recipe because it is not strained and would be too liquidy with the added lemon juice in this particular zaatar yogurt dip but I do make Doogh with it.

Zaatar Yogurt Dip

  1. 1 C Good Quality Thick Yogurt
  2. 1 T Za’atar (Divided) + More To Taste
  3. ¼ t Garlic Paste
  4. ½ T Dried Mint
  5. 1 T Lemon Juice
  6. ½ t Salt
  7. ¼ t Pepper (If Not Using Aleppo Pepper)
  8. 2-3 T Olive Oil To Drizzle
Instructions
  1. Mix yogurt, garlic, lemon juice, and ½ T za’atar until smooth.
  2. Smear on plate, sprinkle with salt, mint, rest of za’atar, and Aleppo pepper (If using).
  3. Drizzle on olive oil.
  4. Serve with cucumber coins, Kalamata olives, or any other low carb vegetables.
  5. 4 Servings

  2. ½ C Olive Oil
  3. 3 T Lime Juice

Instructions
  1. Put all ingredients in a small processor and process until cilantro is pulverized.

  1. Depending on how you use (drizzle) this dressing, it may yield more than 8 servings which is about 2 T per person. This may not seem like a lot but I don't think I used that much on either of the pictures shown.
  2. Refrigeration should solidify you olive oil so take it out before using, stir it, and leave it on the counter for ½ an hour or so.

Keto Beurre Blanc Sauce

This is an elegant, spiffy, easy little sauce that goes particularly well with just about any meat depending on the herbs used.  I used tarragon/tarragon vinegar for use on a ribeye but changing to thyme/rosemary makes it good on poultry of any kind or use lemon juice for seafood. Think a steak with a little crab & asparagus. Very simple to make but oh, so flavorful.  Though keto beurre blanc sauce may look a bit reminiscent of a Béarnaise, it has no egg yolk.  It instead relies on a touch of heavy cream and the sauce is strained making it smooth as silk. The next time I fix it, it will probably be for a calamari steak and a little goes a long way. If you have leftovers? Put it on your breakfast eggs. Yum.

Beurre Blanc Sauce

  1. 3 T Tarragon Vinegar
  2. 3 T White Wine
  3. 2 T Minced Shallots
  4. ¼ C Heavy Cream
  5. 12 T Cold Butter
  6. Salt & White Pepper To Taste When Finished
Instructions
  1. Put shallots, wine, and vinegar in a small saucepan. On very lowest setting reduce, until you have about 2 T liquid left. The idea is to soften the shallots to extract their flavors.
  2. Strain out shallots and (tarragon) & add heavy cream to vinegar mix.
  3. When all is warm, begin adding butter 1 T at a time, mixing until nearly incorporated, then add the next 1 T butter until all butter has been used.
  4. Serve immediately.
  5. 8 Servings

Low Carb Cucumber Lime MignonetteLow Carb Cucumber Lime MignonetteLow Carb Cucumber Lime MignonetteLow Carb Cucumber Lime MignonetteLow Carb Cucumber Lime Mignonette.  This low carb Cucumber Lime Mignonette is good with pretty much any seafood.  If you like raw oysters, and I do, it is perfect doused on them.  The second time I made it, and when I was sure I liked the balance, I did it with a flash-fried calamari steak, hence the picture.  I know it’s good on shrimp but I didn’t take pictures so the next time….and now done.  I most often do not eat oysters at home as they are such a treat on the rare occasion that I eat out, but I will now buy some soon, just to pig out on them.  I have had some really good mignonettes and I have also had some pretty tasteless ones so you will have to decide which you think this is.  There’s a Bonus:  It also makes a fabulous salad dressing with the addition of olive oil.  You can’t see much of it but you sure will taste it.

  2. 2 T Fish Sauce
  3. 1 T Lime Juice
  4. ¼ C Minced Cucumber
  5. ¼ C Minced Purple Onion (Or Shallots Are Great Too)
  6. 2 T Minced Jalapeno Pepper
  7. 2 T Allulose***
  8. 1 T Jalapeno Juice
  9. 1½ t Garlic Paste***
  10. Freshly Ground Pepper If Desired
Instructions
  1. In small bowl mix all liquid ingredients then add garlic and Allulose.
  2. Mince all appropriate veggies and add to liquids.
  3. Refrigerate for at least several hours.
  4. 6 Servings

Keto Yogurt Walnut Dip

A friend from Dubai was staying with me for several weeks. One day we got in the kitchen and made 3 dishes and this keto yogurt walnut dip was one of them.  In the Middle East it is customary to eat communally and not uncommon for there to be many smaller dishes in which everyone at the table gets only 2-3-4 bites of 7-8-9 different foods.  It is an absolutely lovely way to eat and…you get to taste many foods in one sitting.  Each woman is complimented on not only how good the food tastes but how beautifully it is decorated.  The plate was a gift and I am now using it a lot.  My first thought when I saw it was; holy smokes, it has such a busy pattern you won’t be able to see the food.  You can see what a doofus I am. Not only does the food look great, it is enhanced by the plate and seriously how in heaven’s name would I know more than centuries of women before me. Duh.  The one slice of bread is a piece of my Low Carb Carbalose Bread.  I was out of my own Keto Yogurt the day I made this and which is why I used the labne.

It is also customary to have more food than the numbers of people are able to eat so you can imagine the leftovers which…are eaten the following morning and then into the next meal and so it goes, on and on.  The people are incensed when there is not enough food so I guess as they say;  Better Safe Than Sorry.  Not our custom here in the US but, I don’t think we necessarily have a corner on anything.

The ingredients are simple and the taste is complex.  That pepper sauce you see is Aleppo Pepper and…as this is already too long, its description is told in the Red Pepper Walnut Relish.

Walnut Yogurt Dip

  1. ¾ C Full Fat Yogurt (Or Labne If You Can Get It)
  2. 6 T Toasted Small Chopped Walnuts (Divided)
  3. 2 T Aleppo Pepper Paste
  4. ¼ t Salt
  5. ⅛ t Crushed Garlic Paste***
  6. 2-3 T Olive Oil
Instructions
  1. Toast chopped walnuts.
  2. In medium bowl mix yogurt, red pepper paste, salt, garlic, and 5 T walnuts.
  3. Smear on serving plate and place last T walnuts in center.
  4. Drizzle generously with olive oil.
  5. Serve with plate of low carb veggies and bread if using.

  1. Please do take the time to toast the walnuts as it makes a huge difference in the end product.
  2. I doubt you have access to Aleppo Pepper Paste and a really good substitute is Ancho Chile Powder with a bit of salt. It has about the same heat profile (not hot).
  3. If you do end up with the chili powder add two parts powder to one part water or olive oil, mix, and allow to sit until it thickens. Include a bit more salt in the recipe as Aleppo pepper is dried with salt.
  4. Recipe easily doubles.

Keto Cowboy Butter

There are days, and I mean many of them, that I can barely wait to have dinner, and eating anything with this keto cowboy butter sauce is one of them. It should not be hard to imagine how good this sauce is.  All you have to do is look at the ingredients and let’s face it, butter and garlic are good on a brick but it really will go with about anything you want to dip into it.  Vegetables, breads, steak, chicken, seafood…I used chicken tenders for this go-round but um, you really can’t beat a great steak. Everything about this sauce is appealing.  Ingredients are not so different than a good Complex Compound Butter but a heck of a lot easier to fix.  No molding the butter or rolling it in film and waiting for it to get firm enough to slice. Both have their own roles but this keto cowboy butter is pretty immediate gratification.

  1. 6 T Butter
  2. 2 T Garlic Paste***
  3. 1 T Dried Parsley
  4. 1 T Dried Chives
  5. 1 t Dried Thyme
  6. ¼ t Red Pepper Flakes
  7. ¼ t Paprika
  8. ¼ t Salt
  9. ¼ t Pepper
  10. ⅛ t Cayenne Pepper
  11. 1 T Lemon Juice (Only For Seafood)
Instructions
  1. Slightly melt butter.
  2. Add all ingredients to a small bowl and mix well.
  3. Serve in small individual dipping bowls.
  4. 4 Servings

  1. I serve this just barely warmed so most of it will stick to the food I am dipping into it.

Keto Smoky Eggplant Dip

Keto Smoky Eggplant DipKeto Smoky Eggplant DipKeto Smoky Eggplant DipKeto Smoky Eggplant Dip.  We all pretty much know about the famous eggplant dip Baba Ganoush but this is a horse of a different color and just as healthy as its cousin.  Interesting in that it has many of the same components but tastes completely differently.  An eggplant dip would normally be smeared around on a plate and served with veggies and with pita or many of the specialty breads made in the Middle East.  I have shown this keto smoky eggplant dip both with veggies and with kalamata olives & mint not only because they are traditional, but they are all also low carb. If you happen to make either my Naan Flat Bread or the new Keto Pork Rind Wraps torn into shards, as seen in the third picture, they are both perfect low carb accompaniments.

Notice in the last picture the roasted eggplant in a jar. If you want to make life easier for yourself and you don’t want to oven roast your eggplants this is a fabulous hack and so much easier and I now use it all the time.

Smoky Eggplant Dip

Ingredients
  1. ½ C Baked Drained & Mashed Eggplant (About 1 Small)
  2. ½ C Labne (Sour Cream Or Full Fat Yogurt Will Work)
  3. 2 T Lemon Juice
  4. 1 T Grated Shallot (Onion)
  5. ½ t Liquid Smoke
  6. ½ t Salt
  7. ¼ t Pepper
  8. ¼ t Garlic Paste***
  9. 2-3 T Olive Oil For Drizzling
  10. 2 t Dried Mint (Garnish)
Instructions
  1. Bake, drain, and mash eggplant. Put into small bowl and mix in rest of ingredients except olive oil and mint.
  2. Put onto plate, drizzle with olive oil and garnish with mint.
  3. Serve vegetables, olives, and (bread) for scooping.
  4. 6 Servings

Notes
  1. To make this easier you can also buy jarred already cooked eggplant. A friend gave a large jar of it to me, I used it for this recipe, and I have to say it was quite good. I will probably use the rest of it for my eggplant soup.
  2. If using whole eggplant and once it is baked, I prop up the pan, split the eggplant on one side from top to bottom, let it cool a bit and then with a fork try to push out as much of the juice as I can.
  3. Recipe easily doubles.
  4. You can use minced onion instead of grated but you will not get the flavor or the smooth consistency it should have.
  5. I didn't want to overwhelm the look of the dish but I am positive, and if you have it, that za'atar would be spectacular sprinkled on the final plate.
