Keto potato soup is made with daikon radish and for good reason.  Daikon radish has almost no flavor of its own but will take the flavors and shapes of many other things, with potatoes at the head of the list.  In the low carb and diabetic worlds most people seem to be looking for really good low carb substitutions for potatoes, rice, sugar, and wheat and the daikon radish is it for potatoes.  Its benefits are many:  It doesn’t change color when exposed to air, you can eat it raw in crudités, you can grate it for a salad and chunk it for potato salad etc. Here is Warm Daikon Radish German Potato Salad, Beef Rouladen, and here’s a Daikon Radish Dill Pickle Egg Potato Salad

Potato Soup

Ingredients
  1. 6 C Daikon Radish Cut Into Small Bite Size Pieces
  2. 1 C Small Diced Onion
  3. 1 C Small Diced Celery
  4. 2 T Olive Oil
  5. 1 T+1 t Chicken Base (This Is Your Salt)
  6. 2½ C Heavy Cream
  7. 3 C Water
  8. Pepper To Taste
  9. Sour Cream (Optional)
  10. Chives (Optional)
  11. Bacon Bits (Optional)
  12. Cheese (Optional)
  13. Drizzled Melted Butter (Optional)
Instructions
  1. Peel, cut, and simmer daikon radish for about 30-40 minutes until tender. Drain.
  2. Meanwhile in large soup pot, put diced celery & onion in olive oil and saute until just beginning to sizzle then add 1 C water, turn down heat and simmer until tender.
  3. Add back daikon radish, remaining water, heavy cream, chicken base, and simmer for 30-40 minutes.
  4. Serve with any or all of the optional ingredients.
  5. Put the pepper grinder on the table and let people grind their own.

Keto German Potato Salad

One of the things that happens for me, when I am doing a new recipe with any particular ingredient is; my mind goes nuts as I think of the other things I can also do with that same ingredient which is the case for this recipe.  When I finished the Daikon Radish Dill Pickle Egg Potato Salad I realized I could do a lot more with daikon radishes.  When cubed, it looks like potato and when cooked and with other things added it tastes pretty much like a potato so why not try a Keto German Potato Salad with it.  Guess what, low and behold it tastes just like you’d think it should.  And now I will probably come up with even more uses for this very under-appreciated vegetable.  They can be pickled, used in stews, grated for use in a salad, and sliced into disks as a low carb dipping veggie.  As you can see in one of the pictures it is the perfect accompaniment to a good Weisswurst sausage with a spicy mustard.

Warm Daikon Radish German Potato Salad

Ingredients
  1. 1 Lb Wedged & Chopped Daikon Radish (About 3-3½ Cups)
  2. ½ Lb Bacon Diced & Sautéed (Save All The Grease & You May Need More)
  3. 1 C Peeled & Seeded Cucumber (⅔ to 1 Cucumber Depending On Size)
  4. ¾ C Dilled Pickle Wedges (No Garlic)
  5. ½ C Minced Purple Onion
  6. ½ C Green Onion Tops
  7. 6 T Bacon Grease (This Is Why You Never Throw Away Bacon Grease)
  8. 2½ T Cider Vinegar
  9. 1½ T Water
  10. 1½ t Dijon Mustard
  11. 2 Drops Liquid Sucralose (Or 2 T Allulose To Keep It Paleo)
  12. ½ t Salt
  13. ½ t Pepper
Instructions
  1. Gently boil daikon radish for about 30 minutes.
  2. While radish is cooking prep all veggies and put into a large mixing bowl.
  3. In a small bowl combine and mix last 6 listed ingredients (The Dressing).
  4. Drain radish, and add to veggies.
  5. Dress and mix all and let sit at room temperature until ready to serve.

You know, even I can get a little tired serving cauliflower yet one more way (and I already eat a lot of cauliflower as evidenced by the number of recipes on this site) which is why I decided to try making this Keto Daikon Radish Dill Pickle Egg Salad recipe. Looks like potato salad, tastes like potato salad but low carb daikon radish dill pickle egg salad has…no potatoes. Back in my Colorado days I had an older friend who, when she had me over for dinner, I would nicely ask her to make “her” potato salad.  I think there are a couple of reasons I loved this:  1.)  I loved Elva and 2.) I love dilled pickles. Now yes, in those days I did eat it as a real potato salad.  Do Daikon radishes taste like potatoes?  No they don’t, but the great news is, when cooked they really don’t taste like much of anything and take on beautifully any flavors you are adding to them, kinda like Warm Diakon Radish German Potato Salad if made properly.  So, if you like dilled pickles the way I do, then this is a terrific way to eat a very low carb “potato” salad and which would be perfect with Southern Deep Fried Chicken on a picnic or when you are having fun and grilling steaks.

Daikon Radish Dill Pickle Egg Salad

Ingredients
  1. 1 Lb Or About 3 Cups Peeled & Chopped Daikon Radish Cut Into Bite Size Pieces
  2. 4 Chopped Hard-Boiled Eggs
  3. ½ C Finely Chopped Dill Pickles (No Garlic)
  4. ½ C Finely Chopped Celery
  5. ¼ C Finely Chopped Purple Onion
  6. ½ C Mayo
  7. 2 T Yellow Mustard
  8. ½ t Paprika
  9. ¼ t Dried Dill
  10. ½ t Salt
  11. ¼ t Pepper
  12. ¼ C Finely Sliced Green Onion Tops (For Garnish)
  13. More Freshly Ground Pepper To Taste
Instructions
  1. Boil radish pieces 15-20 minutes or until fork tender. Cool in cold water & drain.
  2. Add radish, pickles, celery, eggs, & purple onion to large mixing bowl.
  3. In a smaller bowl add next 6 ingredients, mixing thoroughly.
  4. Add to radish mixture, mix well and stick in the fridge for at least an hour-longer is better.
  5. Plate, top with green onions.
  6. Pepper to taste.

Low Carb Roast Beef Hash

Prime rib (and most meat) is not nearly as good when reheated and restaurants have struggled with this for a long time.  If you are an early bird restaurant goer do not order the prime rib or at least ask if it is from the prior day.  There are chemical reactions going on which can not be avoided. The actual term is “warmed-over flavor”. (WOF) One of the ways to mask this reaction is by adding herbs, spices and other ingredients. I don’t make this often but I do when I have leftover (mine would be rare) prime rib.  Low carb roast beef hash is a relatively simple meal and you will need one recipe of Brabant “Potatoes, Caramelized Zucchini or as I used, daikon radish, as your potato substitute. So, another restaurant secret? They make more money selling prime rib in hash than they do selling a slab of it at dinner. The really sad news is that they now cut off the fat cap surrounding the top of the roast so if you know your butcher ask for the cap to be left on-it’s what I did as you can see in the 2nd picture. Not only does the cap protect the meat from overcooking…it tastes fantastic.  For me, eating the roasted fat is like eating diabetic candy. Remember that as you spice your prime rib-those same flavors will go into your hash and I say to simply use salt & pepper. Roast Beef Hash

  1. 1 Recipe Brabant Potatoes, Caramelized Zucchini, Or Daikon Radish Wedges
  2. 4 C Trimmed Beef (Any Beef-Does Not Have To Be Prime Rib)
  3. 2 C Medium Diced Onions
  4. Oil (Your Choice And I Use Tallow)
  5. Salt & Pepper
  6. 12 Eggs
Instructions
  1. If using daikon radish sauté in fat.
  2. Lightly process trimmed beef and put into a large bowl.
  3. Dice raw onions & add to beef.
  4. Add vegetable of choice.
  5. Add oil, salt & pepper and toss all to mix.
  6. Quickly fry hash in a very hot large skillet.
  7. Fry eggs two at a time and serve atop hash.
  8. 6 Servings
  9. 466 Calories, 30.6g Protein, 21.7g Fat, 8.4g Carbs, 1.7g Fiber 6.7g Net Carbs
Notes
  1. I have included ½ C fat in the nutritionals and as I said it is the oil of your choice. Some for frying the eggs and the rest for the hash. If you use beef fat as your oil to fry, get it hot and then add hash.
  2. This should be cooked and served quickly.
  3. Have leftover corned beef? It's a great substitution.

  4. Over the weekend I came up with a suggestion to share with you. I am a huge fan of corned beef hash, either made fresh or out of a can (yes, I know). I have tried making it with radishes or your Brabant potatoes ( which were good) and the results were satisfying. However, the other day I had an idea. We are fried cabbage junkies in this house, chopped small and sautéed to a light caramelization. I thought why not combine the cabbage with corned beef? Holy crap – home friggin run!!!!! Made hash with two fried eggs and was ready to die a happy man! The combo of the cabbage and a can of Hormel corned beef is a match made in heaven.

Though I have never eaten tons of potatoes I certainly like them, these are a terrific substitute and easy, easy, easy. Brabant potatoes are nothing more than deep fried cubed potatoes and the only thing we are doing is cubing daikon radish instead. Cut differently and still deep fried, they make a great french fry substitute. Use your favorite oil and I use my own rendered tallow and butter is great too. The flavor? OMG and good grief. Low Carb brabant potatoes barely needs a recipe they are so easy. Can substitute these for Caramelized Zucchini in Chicken Tchoupitoulas.

Brabant "Potatoes"

Ingredients
  1. About 4-5 Cups Cubed Daikon Radish
  2. Favorite Oil for Frying (Olive Oil, Tallow, Or Butter And Duck Fat Is The Best)
  3. Salt
Instructions
  1. Peel Radish.
  2. Cut into approximate ½" cubes.
  3. I cut mine into ½" rounds, then into ½" strips for French fries, and then turn again for cubes.
  4. Parboil until fork tender, just like you would any potato.
  5. Drain well in a strainer.
  6. Stirring often, sauté in 350°-360° fat until golden brown.
  7. Add salt, pepper and any other herbs or spices you are using, stir and serve.
  8. 4 Servings

Low Carb Chicken Tchoupitoulas. (chop-a-too lus) I don’t think this is a particularly well known recipe but I am pretty sure you will add it to your recipe book repertoire once you have had it. I have to say it is a spectacular presentation and makes a great meal for company. The original recipe calls for brabant potatoes and I have subbed them with caramelized zucchini and as many times as I have served this recipe (with potatoes) I seriously can’t tell the difference.  You will need Sauce Béarnaise to complete the dish and please read how to do the Caramelized Zucchini. For a more authentic looking dish please see Brabant “Potatoes” made with daikon radish.

If you look at the picture of the raw products on my cutting board these are things I do as part of Future Cooking. I have all of them on hand and it is easy to get what I need either from the freezer or the fridge. Future cooking ensures an easy dinner when you want it. Low Carb Chicken Tchoupitoulas is pretty much an all inclusive meal and served with your favorite salad should be plenty enough.

  1. 2 Large Chicken Breasts Butterflied & Cut Completely
  2. 2 T Butter
  3. 4 C Small Diced Zucchini
  4. 2 T Olive Oil +2 T Butter
  5. 1 C Sautéed Mushrooms
  6. 2 T Butter
  7. ½ C Julienned Onions
  8. 1 T Butter
  9. ½ C Roasted Red Peppers
  10. 1 C Green Onion Tops
  11. 8 Oz Good Dry Shaved Ham (Or Tasso If you Have Access)
  12. 1½ C Water
  13. 1½ t Chicken Base
  14. 1½ t Gumbo Filé
  15. ½ t Crushed Garlic
Creole Spices
  1. 3 t Dried Basil
  2. 2 t Paprika
  3. 1½ t Marjoram
  4. 1½ t Thyme
  5. 1 t Poultry Seasoning
  6. 1 t Cayenne Pepper
  7. 1 t Salt
Instructions
  1. Heat olive oil & butter to hot and sauté zucchini until well caramelized. Set aside & keep warm.
  2. Sauté mushrooms. Set aside & keep warm.
  3. Sauté onions & add red peppers to heat. Set aside & keep warm.
  4. Combine Creole spices and sprinkle ½ on chicken.
  5. Heat 2 T butter on medium high and sauté chicken. Set aside.
  6. Quickly sauté ham & put atop chicken.
  7. Add water, chicken base, garlic, and other ½ Creole seasoning to pan & boil.
  8. Take pan off heat, mix in gumbo filé, it should thicken slightly.
  9. Add all vegetables back into pan and warm-do not boil.
  10. Check seasoning.
  11. Plate chicken and spoon veggies over top.
  12. Generously nap with béarnaise.
  13. 4 Servings

  1. 2 C Daikon Radish-Rough Chopped Small Pieces
  2. 2 Diced Small To Medium Leeks
  3. 2 Rough Chopped Medium Onions
  4. 4 C Water
  5. 2 C Mashed Or Riced Cauliflower
  6. 2 C Heavy Cream
  7. 2 T Chicken Base Or To Taste
  8. ½ C Sour Cream (Garnish)
  9. ½ C Melted Butter (Garnish)
  10. ¼ C Finely Chopped Green Onions (Garnish)
Directions
  1. Slice and wash leeks.
  2. Rough chop onions.
  3. Put all ingredients down to heavy cream in large sauce pan, cover, and simmer 35-40 minutes or until daikon is tender.
  4. With your immersion blender, blend until smooth.
  5. Add heavy cream, chicken base and blend again. Correct seasoning.
  6. If serving room temperature just let sit on counter for a couple of hours.
  7. If serving cold, refrigerate for 3-4 hours.
  8. Put soup in bowls, drizzle with 1 T butter, 1 T dollop sour cream, and ½ T green onions.
  9. 8 Servings

I learned to make Clam Chowder 45 years ago (my, my how time flies) from “Chef Bob” who was of course from Boston.  There are (were) two secrets.  One is using salt pork (not bacon) and the other is the addition of thyme.  My only change from the original is that I have cut out the potatoes and flour and use pureed cauliflower to thicken and used daikon radish rather than potatoes.  Sadly, unless perhaps from a restaurant supply house you can no longer get real salt pork anymore.  Oh, for sure if you lived in North Carolina or a couple other southern states but not here in Portland town. The crap in the grocery stores is just that, crap-not cured with salt anymore and as much as I have said salt pork has always been a key ingredient, I too now have to resort to bacon.  Now, I do have access to fabulous bacon so, at least half the battle is won in the making of this fabulous keto New England Clam Chowder.

New England Clam Chowder

Ingredients
  1. ½ Lb Double Smoked Thick Sliced Bacon If Possible. Mine Is 8 Slices Per Lb
  2. 2-3 C Daikon Radish Cut Into Wedges
  3. 1 C Onion ¼” Dice
  4. 6 Cans Chopped Clams (Including Juice)
  5. ¼ t Dried Thyme (Slightly More To Taste)
  6. 2 C Water
  7. 2 C Heavy Cream
  8. 2-3 t Chicken Base Paste (I use a premium chicken base made by R L Schreiber)
  9. 1-2 C Cooked & Puréed Cauliflower (This Is Your Thickener)
  10. Fresh Pepper to Taste
  11. Correct Seasoning When Finished
Instructions
  1. Cut & cook daikon radish about 30 minutes (until tender) in 2 C water.
  2. Dice bacon into ¼” pieces. This is pretty small and the easiest way to do it is to have the bacon partially frozen. Sauté on medium low until very crispy. Should take about 15-20 minutes. Remove bacon and retain half the fat.
  3. Sauté onions in remaining fat until translucent.
  4. Put the thyme in the palm of your hand, crush it, and add to onions.
  5. Add clams & juice.
  6. Add diakon radish, remaining water, heavy cream, ½ of the crispy bacon and bring to simmer for 10-15 minutes.
  7. Stir in puréed cauliflower to thickness desired.
  8. Correct seasoning to taste.
  9. Put soup in bowl and sprinkle on rest of bacon.
  10. If you have any leftover soup just add the rest of the bacon lardons.
  11. 6 Servings

  1. If you have bottled clam juice all the better and you can sub it for some or all of the water.
