He followed her to Canada at the beginning of the “Covid”, has not been able to return to his home, and I’m betting he misses a good Keto Carolina Meat Mop recipe. Really, he probably has his own because he makes soooo many pork dinners but one can never have too many recipes for something you love. Below are a couple of Steve’s pics of pork from his website www.diabeteswarrior.net.

Serve with Keto Coleslaw and this is a true Southern favorite. The recipe is for the meat mop only and to use with Pulled Pork see here. There are virtually no carbs and when served with chicken or pork, the only thing that changes are the calories as there are no carbs in either of those either.

Carolina Meat Mop

Ingredients
  1. 6 Servings
  2. 2-2½ Roasted Pork Butt (Bone In or Bone Out-Your Choice)
  3. 1 C White Vinegar
  4. ½ C Melted Butter
  5. 2 T Allulose
  6. 1 T Salt
  7. 1 T Lemon Juice
  8. 1 T Red Pepper Flakes
  9. ½ T Favorite Hot Sauce (I Used Tabasco)
  10. ½ T Black Pepper
  11. 2 t Liquid Smoke
Instructions
  1. Melt butter and mix with all other ingredients except the pork.
  2. 6 Servings
  3. 161 Calories, 0.2g Protein, 17.0g Fat, 1.0g Carbs, 0.0g Fiber, 1.0g Net Carbs
Notes
  1. I used Tabasco Sauce because it is also vinegar based and in my opinion the best hot sauce for this recipe.
  2. As the butter cools it begins to coagulate so just mix it back in when ready to serve.
  3. You may be thinking that this looks extremely spicy but the butter cuts lots of it. It is really quite well balanced.
