Hello Chef! Thanks for the Carbalose recipes! I have a question; I can't find any gluten as many of the recipes call for. I found vital wheat gluten, is that the same thing? If not, can you please tell me where I can find gluten? I already looked on your page of low carb pantry staples but didn't see it listed. Thank you so very much!! I appreciate you!

You can use oat fiber in place of coconut flour. 1:1 measurement. I don't like the coconut flavor either!

Hey Sheila,
Been a while. Not sure what to tell you about the coconut flour as it is an integral part of the recipe and greatly affects the liquid needed. I wouldn’t worry about the sweetener as many people don’t use it. I just put it in to counter the often-times found bitter taste that many people say the flour has. With that said glad you still liked the rolls.

In the carbalose bread you add sweetener to cut the bitterness of the flour - as you said. Yet, this recipe does not call for the sweetener. I was going to put it in anyway and forgot.

Also, is there anyway way to cut out the coconut flour? I really hate the way anything tastes with it - I don't taste coconut but I just don't like what I DO taste.

Otherwise the rolls were just like real bread - which is a wonder in the low carb world. If I had used the sweetener, I guessing I would have loved it - yet that coconut flour taste...

Hi Tim and the answer is yes. Use this recipe https://diabeticchefsrecipes.com/low-carb-carbalose-bread/ and just shape the dough as you wish. There is a pic of rolls that I used as Hamburger Buns and the nutritionals are below the recipe.
Have Fun.

Do you think these could be adapted into hot dog and hamburger buns? Or do you have any other suggestions that might work? I saw your pretzel buns, but I'm not a big fan of pretzel buns.

Cindy,
Not understanding. Flaxseed Meal really has no flavor. It is mostly used as a binder and also helps give a bit of crunch to the crust. The only thing in your list that might work is chia seeds but I have never tried using them in bread. This is baking and baking requires you to pretty much follow a formula but if you can improve it, then please do your own experiments.
Good luck and hope this helps.

They look yummy, Deborah. Is there anything I can sub for the flaxseed? I really don't care for it. I have Carbalose, carbquik, almond, coconut, lupin flours, and psyllium husks and powder, and chia seeds, plus a bunch of Kevin Pa's bread ingredients (wheat something or other 5500 and 8000, and poly dextrose. Thanks!
